Southwest Chipotle Salad

A Healthy Recipe Packed Full of Flavor



This salad is something I came up with during the recent pandemic. I used to make the mixture and serve it with cauliflower rice, but I was ready for a change up, so I turned it into a salad. The recipe will make up enough for 4-5 salads, and it's super easy to make!


Here are the ingredients and steps to create a Southwest Chipotle Salad:



RECIPE INGREDIENTS:

  • 1 Bag of lettuce (I use Romaine)

  • 1 Can of corn

  • 1 Can of black beans

  • 1 Can of shredded chicken

  • 1 Jar of salsa

  • Hidden Valley Southwest Chipotle dressing





STEP 1: DUMP IN INGREDIENTS

To start, I open all the cans of corn, black beans, chicken and salsa and dump them into a large bowl. Be sure to drain the excess juice from the corn, black beans and shredded chicken.





STEP 2: STIR MIXTURE

Stir the mixture...make sure all ingredients are well blended.




STEP 3: ADD LETTUCE

Add your desired amount of lettuce to a large bowl.




STEP 4: TOP WITH MIXTURE

Scoop a portion of the mixture onto the top of the lettuce. Pour on desired amount of dressing and serve.
